When my 7-year-old daughter, Sloane, saw someone roasting a rice krispie treat over a campfire as I scrolled through Instagram, she asked if we could make S’mores Crispy Treats. It sounded genius to me so off we went to the store. I took my every popular Carb Load Crispy Treat recipe and swapped out the cake mix for crushed graham crackers. Stirred in extra graham crackers and pressed some milk chocolate into the top. And, TADA – these suckers are incredible!
What’s even better than your classic S’mores ooey, marshmallow treat? These new S’mores Crispy Treats combine S’mores + Mallow Crispy Treats. Feel free to take these to all your summer parties. They are super easy to throw together and sure to be a crowd-pleaser.
The great thing about S’mores Crispy Treats is that they are not only a solid dessert but double as pre-run fuel. And, we know these are also a great addition to a carb load or to help you scale up your daily carb intake as your training increases.
For pre-run, we need fast carbs to give us fuel – try one square for a run 30 – 60 minutes and two squares for an over 60-minute run. During a carb load before any endurance race >90 minutes, these treats make it easy to take in some solid carbs in a tasty little package.
Press in the milk chocolate chunks when the treats are still warm if you want them extra gooey. Or, allow them to completely cool before cutting. And, enjoy!
S'mores Crispy Treats
Ingredients
- 2 bags marshmallows 10 oz
- 5 Tbsp butter
- 6 graham crackers sheets crushed & divided
- 7 cups crispy rice cereal
- 1 milk chocolate bar 1.55 oz
- nonstick cooking spray
Instructions
- In a large microwave-safe bowl (or pan on the stove over low heat), melt butter & marshmallows. Stir often and make sure not to overheat or burn.
- In the meantime, place graham crackers into a plastic bag and smash with your hand or a rolling pin.
- Once marshmallows are melted, remove from heat. Stir in ⅓ cup crushed graham crackers. You want to work quickly here as the mixture stiffens up as it cools, making it hard to stir.
- Dump in the crispy rice cereal. Start with 7 cups of rice cereal. I like ooey gooey treats. However, if you like a firmer treat, add 8 cups or more to your liking.
- Stir in ⅔ cup crushed graham crackers. Stir again. There should be a few graham cracker crumbs left for the top.
- Spray your 8x8 pan or 9x9 cake pan with oil. Pour the crispy treat mixture into the pan. If needed, grease your hands to pat down the treats into your pan.
- Break your chocolate bar into rectangles. Press chocolate & remaining graham cracker crumbs into the top of your treats.
- Allow to sit and cool. Or, dive right in for a melty, ooey gooey S'more Crispy Treat!
- Cover with foil or store in an airtight container until you devour them.
I have so many questions. I think I’m not getting enough carbs before my long runs because I feel depleted of energy during the last miles of my run.
