I don’t know about you, but I was getting a little bored with my go-to dinners recently. So, I set out to create some new dinner recipes for 2024. This one is pretty tasty if I do say so myself. The salmon in this recipe is brought to a whole other level with the sauce and texture from air frying.

Saucy Salmon Bowls are super easy – make your rice ahead of time in a rice cooker or Instant Pot for extra ease or buy pre-cooked rice, I’m not judging. The longest part of this recipe is cooking your rice – the rest is super quick & great for a fast, weeknight dinner. To prepare your bowl, just add rice + cucumbers + avocados + salmon + sauce and enjoy! This recipe provides a balanced meal packed with carbs, veggies, protein & healthy fats from salmon and avocado. I love bowl meals because they are super adaptable. If you need more carbs, you can add a bigger rice base. If you need more veggies, you can add some steamed broccoli or zucchini. Add edamame for more protein. Make this your own for what YOU & your training needs!

You can use fresh salmon or frozen salmon for this recipe but make sure to thaw your frozen salmon before starting this recipe. The air fryer is hands down the appliance I use the most in my kitchen and I highly recommend one. But, if you do not have one and don’t want one, you can bake your salmon in the oven. Follow all the directions to prepare the salmon chunks & preheat the oven to 400 degrees – then bake for 15 – 18 minutes or until baked through.

If you are using this recipe for meal prep, buy those mini avocados and just wait to cut and add the avocado right when you are eating it. Delish! These bowls will keep well in the refrigerator for 3 – 4 days. Enjoy!

Saucy Salmon Bowls

Servings 4

Ingredients
  

  • 16 oz salmon filet, raw, skinless, cut into 1 inch pieces
  • ¼ cup sweet chili sauce
  • 2 Tbsp soy sauce or tamari
  • 2 Tbsp honey
  • 1 Tbsp lime juice
  • 4 cups rice, cooked
  • 1 large cucumber, cubed
  • 2 avocados, diced
  • spicy mayo
  • Teriyaki sauce
  • Optional: sesame seeds, green onions

Instructions
 

  • Preheat air fryer to 400°F
  • In a medium bowl, mix together sweet chili sauce, soy sauce, honey and lime juice. Mix well. Add in raw salmon pieces. Stir gently to coat salmon well with the sauce. <Bonus points if you have a moment to let it sit & marinate.>
  • Prep your air fryer basket or tray. <add foil to the bottom for easier clean up> Air fry salmon pieces for 8-10 minutes or until cooked through.
  • Assemble your bowls with 1 cup cooked rice, ¼ of the salmon pieces, ½ avocado and a big handful of cucumbers and drizzle spicy mayo & teriyaki sauce on top. Sprinkle with sesame seeds & green onions.

Notes

How to Use:
Athletes -  Adjust your serving of rice as needed. You may need 1.5 - 2 cups of rice. 
Healthy Eating - Adjust your vegetables & rice servings to balance your nutrition needs.  Adding zucchini, broccoli or a side salad is a good idea!
Kids - I love it when I see kids eating salmon, but if they aren't into it, let them make their own bowl out of their own ingredients.
